- 2 tablespoons oil
- 1/2 onion, chopped
- 2 garlic cloves, minced
- 1 1/2 cups long grain rice
- 2 tablespoons cilantro, chopped
- 1 (8 ounce) can tomato sauce
- 1 (10 ounce) can rotel
- 1 (14 ounce) can chicken broth
- salt and pepper
Directions

1heat the oil in a sauce pan over medium heat. Add onions and garlic. Saute until soft.

2Add rice to the pan and coat thouroughly with oil.

3Add cilantro, tomato sauce, rotel, and chicken broth. Season with salt and pepper to personal taste.

4Raise heat to high and bring to a boil.

5Reduce heat, cover and simmer for 10 minutes.

6Remove from heat and, keeping covered, set aside for 15 minutes.

7Uncover, fluff rice, serve, and enjoy.
