Ingredients
- 1 medium sized onion
- 1 (14 ounce) can diced tomatoes
- 1 cup rice
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- salt
- oil, to fry the rice
Directions

1Heat oil in a nonstick pot (make sure you have a lid).

2Cut onions in big chunks.

3Add your onions and rice to the pan, salt the rice and cook until rice is browned.

4In a separate med sized bowl add your tomatoes,2 1/2 cups of hot water and your seasonings stir to mix.

5Add to the hot pan.

6DO NOT STIR.

7Let the rice boil about 10 to 15 minute.

8Cover with lid and turn off the heat.

9Let stand for about 45 minutes, then wa la you have delicious Mexican rice!
