- 1 tablespoon vegetable oil
- 12 onion, finely chopped
- 1 chicken bouillon cube
- 12 teaspoon cumin
- 1 garlic clove
- 12 bell pepper, chopped
- 1 jalapeno, chopped (optional)
- 1 tomatoes, chopped
- salt and pepper
- 12 cup fresh cilantro, chopped
Directions

1Brown rice in oil for three minutes.

2Add chicken broth and bring to a boil.

3Add onion, bell pepper, jalapeno, and tomato.

4Add bullion cube, salt, pepper, cumin, cilantro and garlic.

6Cover and reduce heat to low.
