- olive oil
- 2 cups white rice
- 2 -3 garlic cloves, minced
- 1 onion, diced
- 1 diced jalapeno
- 2 (10 ounce) cans rotel
- salt
- chicken broth or water
Directions

1heat olive oil in pan.

2saute rice, onion and garlic in pan until onion and rice take on a translucent apearance.

3keep them moving, DON'T brown rice.

4Add diced jalapeno and rotel.

5Then add enough chicken broth or water until rice is covered.

6Simmer with lid until rice is done, adding more liquid if necessary.

7remove lid and fluff.

8Enjoy.
