Ingredients

  • 1 c. long grain rice
  • 3 Tbsp. oil
  • 1/2 small onion, chopped
  • 1 clove garlic, minced
  • 1 small tomato or 3 oz. tomato sauce
  • 1/4 c. fresh or frozen peas and carrots (optional)
  • 2 c. boiling chicken broth
  • 1 tsp. salt

Directions

    Saute the rice in hot oil until golden brown.

    Add onion, garlic and vegetables.

    Cook slightly.

    Add boiling stock, salt and tomato sauce.

    Return to a boil, then lower heat, cover and cook on low heat for about 25 minutes or until rice is tender and the liquid has absorbed.
