- 1 c. long grain rice
- 3 Tbsp. oil
- 1/2 small onion, chopped
- 1 clove garlic, minced
- 1 small tomato or 3 oz. tomato sauce
- 1/4 c. fresh or frozen peas and carrots (optional)
- 2 c. boiling chicken broth
- 1 tsp. salt
Directions

1Saute the rice in hot oil until golden brown.

2Add onion, garlic and vegetables.

3Cook slightly.

4Add boiling stock, salt and tomato sauce.

5Return to a boil, then lower heat, cover and cook on low heat for about 25 minutes or until rice is tender and the liquid has absorbed.
