- 1/2 c. onion, chopped
- 1/4 c. diced carrots
- 2 cloves garlic, minced
- 1 Tbsp. oil
- 3/4 c. long grain rice
- 1/2 c. water
- 1/2 c. picante sauce
- 10 oz. diced tomatoes (1 can)
- green chilies
Directions

1In a medium saucepan, saute first 4 ingredients for 3 minutes. Add rice; cook 1 minute and stir often.

2Add water, sauce, tomatoes and chilies.

3Cover.

4Reduce heat to low.

5Simmer 20 to 30 minutes until rice is tender and liquid is absorbed.

6Let stand covered (off heat) 5 minutes.

7Serve hot.
