- 1 1/2 c. regular rice
- 1 clove garlic, chopped
- 1/4 c. chopped onion
- 1/4 tsp. cumin
- 1 1/2 tsp. salt
- 1/2 to 3/4 c. chopped tomato
- 3 c. chicken broth or water
- 5 Tbsp. oil
Directions

1Heat oil until very hot in a heavy pan.

2Add rice; brown slightly, stirring constantly. Add garlic, onion, cumin, salt, tomato and broth or water. Bring to a boil. Reduce to low heat and cook 45 minutes or until rice is tender.
