- 1 c. uncooked long-grain rice
- 1/2 tsp. salt
- 1 Tbsp. vegetable oil
- 1 small onion, chopped
- 1/2 small green pepper, chopped
- 1 garlic clove or minced garlic to taste
- salt and pepper to taste
- chili seasoning
- mild salsa
Directions

1Cook rice according to package directions, salt included. Meanwhile, saute onion, pepper and garlic in vegetable oil until golden, stirring often and taking care not to burn.

2When rice is done, add rice to cooked vegetables.

3Stir and heat over medium-high heat.

4Salt and pepper to taste.

5Add 1 to 2 teaspoons chili powder and about 1/2 cup salsa.

6Stir until blended well and salsa is absorbed into rice.
