- 2 c. long grain rice
- 1 Tbsp. vegetable oil
- 2 c. low-salt chicken stock
- tomato sauce
- 2 c. water
- 1 tsp. salt
Directions

1Saute rice in oil until lightly browned; place stock and 1/3 cup tomato sauce in water with teaspoon salt.

2Add rice.

3Bring to boil; cover and reduce heat.

4Simmer 30 to 40 minutes until liquid has evaporated.

5Serve topped with remaining tomato sauce.
