- 1 green pepper, diced
- 1 medium onion, chopped
- 1 Tbsp. oil
- 1 pkg. frozen corn, thawed
- 1 1/2 c. original Minute rice
- 1 c. mild salsa
- 1 c. chicken broth
- 1/4 c. shredded Cheddar cheese
Directions

1Put oil in skillet.

2Cook onion and green pepper until tender, but not brown.

3Add corn, salsa and broth.

4Bring to boil; stir in rice.

5Remove from heat.

6Cover and let stand 5 minutes.

7Add cheese.

8Fluff with rice.
