  • 1 c. rice (raw)
  • 1 clove garlic, minced or chopped
  • 1 bell pepper, chopped
  • 1 small onion, chopped
  • 1 Tbsp. oil or bacon drippings
  • 2 tomatoes, chopped, or 1 can chopped tomatoes (use juice as liquid)
  • 2 c. water

Directions

    Saute garlic, onion and bell pepper in oil until tender-crisp. Add rice and brown slightly.

    Add tomatoes, then liquid.

    Add 1 teaspoon chili powder and salt and pepper to taste.

    Bring to boil, cover and simmer for 15 minutes or until done.
