- 1 c. rice (raw)
- 1 clove garlic, minced or chopped
- 1 bell pepper, chopped
- 1 small onion, chopped
- 1 Tbsp. oil or bacon drippings
- 2 tomatoes, chopped, or 1 can chopped tomatoes (use juice as liquid)
- 2 c. water
Directions

1Saute garlic, onion and bell pepper in oil until tender-crisp. Add rice and brown slightly.

2Add tomatoes, then liquid.

3Add 1 teaspoon chili powder and salt and pepper to taste.

4Bring to boil, cover and simmer for 15 minutes or until done.
