Ingredients
- 1/4 c. oil
- 1 c. white rice
- 1 onion, chopped
- 1 clove garlic, minced or use garlic powder
- 2 tomatoes, diced (if you have some)
- 1/4 c. chopped green pepper
- 1/2 tsp. ground cumin
- 1 tsp. salt
- 1/8 tsp. black pepper
- 1/2 small can tomato sauce
- 2 c. hot water
Directions

1In large skillet, heat oil and add the rice and saute to a light brown color.

2Stir continuously.

3Add onion, garlic and green pepper.

4Add salt, pepper and cumin.

5Add tomato sauce and stir well.

6Add tomatoes and water.

7Cover and cook over medium heat for about 20 minutes or until water is absorbed.

8Do not stir while cooking.

9Let stand a few minutes before serving.
