Ingredients

  • 1/4 c. oil
  • 1 c. white rice
  • 1 onion, chopped
  • 1 clove garlic, minced or use garlic powder
  • 2 tomatoes, diced (if you have some)
  • 1/4 c. chopped green pepper
  • 1/2 tsp. ground cumin
  • 1 tsp. salt
  • 1/8 tsp. black pepper
  • 1/2 small can tomato sauce
  • 2 c. hot water

    In large skillet, heat oil and add the rice and saute to a light brown color.

    Stir continuously.

    Add onion, garlic and green pepper.

    Add salt, pepper and cumin.

    Add tomato sauce and stir well.

    Add tomatoes and water.

    Cover and cook over medium heat for about 20 minutes or until water is absorbed.

    Do not stir while cooking.

    Let stand a few minutes before serving.
