- 1 small green pepper, chopped
- 1 small onion, chopped
- 1 Tbsp. oil
- 1 c. mild salsa
- 1 c. chicken broth
- 1 c. regular rice
- 10 oz. frozen corn
- 1/2 c. Cheddar cheese, shredded
Directions

1In medium saucepan, saute pepper and onion in oil.

2Add broth, salsa and corn; bring to a boil.

3Add rice, flake with a fork and reduce heat to low.

4Cover. Cook 15 to 20 minutes until rice is tender.

5Serve garnished with cheese.

6Makes 6 to 8 servings.
