  • 2 bags Success White Rice or Success Brown Rice
  • 1/2 cup fat free cheddar cheese, shredded
  • 1/4 cup Parmesan cheese, shredded
  • 1 tsp. ground cumin
  • 1/2 tsp. ground red pepper (cayenne)
  • 1 tsp. salt, divided
  • non-stick cooking spray
  • 2 ripe avocadoes King Sooper's 1 ea For $0.77 thru 02/09
  • 2 Tbsp. lime juice
  • 1/4 cup onion, finely minced
  • 1/4 cup finely chopped fresh cilantro leaves
  • 1/4 cup prepared salsa
  • 1/4 cup fat free sour cream
  • fresh cilantro leaves, for garnish (optional)

Directions

    Preheat oven to 350F.

    Prepare rice according to package directions.

    Spray a mini-muffin pan with non-stick cooking spray.

    Combine cooked rice, cheese, cumin, red pepper, and 1/2 teaspoon salt.

    Press firmly and evenly into prepared mini-muffin tins.

    Bake for 15 minutes.

    Remove from pans and cool.

    Mash avocados with fork in a medium bowl.

    Sprinkle with lime juice.

    Add cilantro, onion, salsa, sour cream and remaining salt; blend.

    Fill each cup with guacamole and top with a sprig of fresh cilantro.
