Ingredients
- 12 whole wheat tortillas
- 1 diced red pepper
- 1 dices sweet onion
- 2 lbs ground beef
- 2 cups hot salsa
- 2 cups shredded sharp cheddar cheese
- 1 cup cooked white rice (optional)
Directions

1Brown ground beef, diced pepper and onion until done.

2Drain if necessary.

3Add cooked rice if using.

4Take 1/12 of beef mixture and put in center of 1 tortilla - fold left side over and roll up tortilla (don't bother closing either end).

5Place in greased 9 x 13 pan.

6Continue for other 11 tortillas (squish 'em in there, they'll fit!

8Pour and spread the hottest salsa you can stand over the top of the tortillas.

9Top with cheese.

10Bake at 375 for 30 minutes.

11Serve with additional salsa and sour cream.

12Even better the 2nd day!
