Ingredients

  • 1 lb. hamburger
  • 1 lb. can diced tomatoes
  • 1 pkg. taco mix
  • 1 pkg. Jiffy corn bread mix
  • 1 (2 1/2 oz.) can diced green peppers
  • 1 (8 oz.) can corn
  • 1/3 c. milk
  • 1/2 c. sour cream
  • 1 c. shredded Monterey Jack cheese

    Brown hamburger.

    Add taco mix and diced tomatoes.

    Mix.

    Set aside.

    Mix next 6 ingredients.

    Grease 9 x 12-inch pan.

    Spread 1/2 of corn bread mixture into pan.

    Spread hamburger mix over this.

    Cover with remainder of corn bread mix.

    Bake 30 minutes at 350°.

    Cut into squares.

    Serve with shredded lettuce, diced tomatoes, sour cream and salsa, if desired.
