Meyer Lemon Cookie Bars

  • 11/2 cups all-purpose flour
  • 3/4 cup butter, softened
  • 3/8 cup granulated sugar
  • Top Layer
  • 11/2 cups granulated sugar
  • 3 large eggs, lightly beaten
  • 2 whole Meyer lemons, chopped finely in food processor
  • 3 tablespoons all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/4 teaspoon salt

Directions

    Preheat oven to 350 degrees

    In mixing bowl combine, flour, sugar and butter for base. Mix on low speed just until combined. Pat into 9 x 13 inch pan, and bake at 350 degrees for 25 minutes, until top is light golden brown.

    Combine the topping ingredients in mixing bowl, and mix with whisk attachment. As soon as base comes out of the oven, pour the topping over it, make sure it is even and return to oven for another 25 minutes.

    While still slightly warm, sprinkle with powdered sugar.

    Cool, cut into 12 squares.
