Microwave Cheesy Chowder

Ingredients

  • 1 1/2 c peeled potatoes, cut into 1/2 inch cubes
  • 1 1/2 c fresh broccoli flowerets
  • 1 c thinly sliced carrot
  • 1/4 chopped onion
  • 1/2 t minced garlic
  • 1/8 t pepper
  • 1/4 c water
  • 1 3/4 c milk
  • 1-16 oz can kidney beans, drained
  • 1-10 3/4 oz can cheddar cheese soup, undiluted
  • 1 c cheddar cheese, grated
  • 1/4 t hot pepper sauce or to taste

Directions

    Put potatoes, broccoli, carrot, onion, garlic, pepper and water in a 3 quart microwave safe bowl.

    Cover with lid or vented plastic wrap.

    Microwave on high 8-10 minutes, stirring once, until vegetable are crisp-tender.

    Add milk, beans and soup. Cover and microwave on high 6-8 minutes, stirring once, until vegetables are tender.

    Add cheese and hot pepper sauce, stirring until cheese is melted.

    Serve hot.
