Microwave Chocolate Pie

- 3 egg yolks
- 1 c. sugar
- 5 Tbsp. cornstarch
- 2 Tbsp. cocoa
- 2 c. milk
- 1 Tbsp. vanilla flavoring
- 1 Tbsp. butter
- 1 deep-dish pie crust
Directions

1Place egg yolks, sugar, cornstarch, cocoa and milk into blender.

2Blend on high until mixed well.

3Pour into microwave-safe mixing bowl.

4Microwave for 2 minute increments.

5Stir well with a whisk after each timing.

6It will take 4 to 5 two-minute timings to get thick.

7Don't over-thicken because as the pie cools, it will become firm.

8Add butter and vanilla.

9Pour mixture into a cooked pie shell.

10As I am cooking the pie mixture, I cook the pie shell according to package directions.

11Top with meringue and bake until lightly brown in 400° oven.
