Microwave Lemon Curd

- 8 Tbsp. (1 stick) unsalted butter
- 3 large eggs
- 1 c. granulated sugar
- grated peel of 3 large lemons
- 1/2 c. fresh lemon juice
Directions

1In a microwavable bowl, microwave the butter for about 3 minutes on High, until melted.

2In a small microwave-proof bowl, whisk together the eggs, sugar, lemon peel and juice until well combined.

3Whisk in the melted butter.

4Microwave on High for 1 1/2 to 2 minutes, whisking often

5(may take longer), until the curd is smooth and thick enough to coat a wooden spoon.

6Remove from microwave and pour into hot sterilized jars (or glass bowl with a cover if you're going to use within a couple of days). Cover and allow to cool at room temperature.

7Store in refrigerator and use within 4 weeks.

8Makes about 2 cups.
