Microwave Pineapple Upside-Down Cake

- 2 Tbsp. butter or margarine
- 1/2 c. brown sugar
- 6 slices pineapple (reserve juice)
- 6 maraschino cherries
- yellow cake mix (Jiffy cake mix, 8 1/2 oz.)
Directions

1Prepare yellow cake mix as directed on package, substituting pineapple juice for the water.

2Melt butter in microwaveproof cake or pie dish, about 30 to 45 seconds.

3Mix brown sugar with butter. Arrange pineapple and cherries on top of butter and brown sugar mixture.

4Pour cake batter over top of brown sugar, pineapple and cherries in dish.

5Cover with a paper towel or waxed paper. Micro-bake 9 to 11 minutes on Medium-high, rotating once.
