Microwave Rice Pudding

- 5 1/2 to 6 c. milk
- 1 1/2 c. Minute rice
- 1/4 c. raisins
- 1 c. cream
- 3/4 c. sugar
- 3 egg yolks, beaten
- 2 tsp. vanilla
- 1/4 tsp. salt
- 1 tsp. cinnamon
Directions

1Bring milk to a boil; add rice and cook until tender.

2Add raisins.

3Cook a minute or two longer.

4While rice is cooking, mix cream, sugar, egg yolks, vanilla and salt together.

5Add cream mixture to rice and cook until boiling again but don't cook until it looks like it might be separating; stir every now and then. Remove from microwave and sprinkle with cinnamon.

6Chill. It will thicken as it cools.
