- 3 beaten eggs
- 2 c. milk
- 1/3 c. sugar
- 1 tsp. vanilla
- 1/2 tsp. salt
- 2 c. cooked rice
- 1/3 c. raisins
- cinnamon
- nutmeg
Directions

1In a 2-quart casserole dish, combine eggs, milk, sugar, vanilla and salt.

2Add rice and raisins; mix well.

3Microwave just until thickened (uncovered), 8 to 10 minutes.

4Stir every 2 minutes.

5Add cinnamon.

6Fold thickened part from edge to middle. Continue cooking until set.

7Sprinkle with nutmeg and let stand 30 minutes without stirring.

8Serve warmed, chilled with light cream.
