Microwave Rice Pudding

- 1/2 - 3/4 cup sugar
- 2 tablespoons cornstarch
- 1/4 teaspoon salt
- 3 cups milk
- 1 egg
- 2 -3 cups rice (I use Jasmine!)
- 2 tablespoons butter
- 1 teaspoon vanilla
Directions

1Make sure the rice is cooked ahead of time.

2Whisk first 6 ingredients. And raisins if you want, we prefer without ;).

3Put in microwave and cook 1 - 1 1/2 minutes.

4Remove and whisk.

5Put back in microwave for another 1 - 1 1/2 minutes.

6Remove and whisk.

7Continue above steps until desired thickness (don't get too thick, you want it a little less thick than desired since it will continue to thicken as it sits).

8Add butter and vanilla once it's at desired thickness. You can omit butter to save on calories!

9Add anything else you want (cinnamon, nutmeg, fresh berries if it's cold, etc).
