- 1/2 c. oil
- 1/2 c. flour
- 1 c. chopped onions
- 1/2 c. chopped celery
- 1/4 c. chopped green onions
- 1/4 c. chopped parsley
- 6 cloves chopped garlic
Directions

1In 4-cup glass measure, combine oil and flour; mix well. Microwave on High for 6 minutes or until as dark as desired. (Stir when there are 2 minutes left on the timer and when there are 30 seconds left on the timer.)

2Stir when timer counts to zero.

3If this is not dark enough for you, continue to microwave on High for 30 seconds.

4Add onions and celery.

5Mix well. Microwave on High for 3 to 4 minutes or until onions are soft but not brown.

6Add green onions, parsley and garlic.

7Microwave on High for 2 to 3 minutes or until done.

8Yields 1 batch roux.
