Ingredients
- 1 lb. ground beef
- 1 medium onion, chopped
- 1 (15 oz.) can kidney beans, drained
- 1/2 c. water
- 1/2 to 1 pkg. taco seasoning
- 1/2 head lettuce, torn in bite-size pieces
- 2 medium tomatoes, cut in chunks
- 1/2 bell pepper, chopped
- 1/2 c. shredded Cheddar cheese
- 1/2 c. shredded Monterey Jack cheese
- 1 c. broken corn chips
- sour cream (optional)
Directions

1Brown meat and onions on High for 4 1/2 to 6 1/2 minutes. Stir, then drain.

2Add beans, water and taco seasoning.

3Cook, uncovered, for 10 to 13 minutes on Medium until thick and bubbly, stirring once.

4Combine lettuce, tomatoes and pepper in a salad bowl.

5Spoon meat mixture over vegetables in bowl.

6Top with cheeses and chips.

7Serve immediately with sauce.

8Top with sour cream.
