- 3 Tbsp. Minute tapioca
- 5 Tbsp. sugar
- 1/8 tsp. salt
- 2 c. milk
- 1 egg yolk
- 1/2 tsp. vanilla
- 1 egg white
Directions

1Mix tapioca, 3 tablespoons sugar, salt, milk and egg yolk in 1 1/2-quart glass casserole.

2Let stand 5 minutes.

3Cook in microwave about 3 minutes; stir, then cook about 2 1/2 to 3 minutes, until mixture comes to a full boil.

4Stir in vanilla.

5Let stand at room temperature while beating egg white until foamy.

6Gradually add 2 tablespoons sugar; whip to soft peaks.

7Fold egg white into hot mixture.
