- 1/4 c. corn starch
- 1/3 c. sugar
- 2 c. milk
- 2 eggs, slightly beaten
- 2 Tbsp. butter or margarine
- 1 tsp. vanilla
Directions

1Combine cornstarch and sugar in 2-quart microwave safe mixing bowl.

2Using a whisk, add milk gradually to cornstarch and sugar mix.

3Place mixture in microwave.

4Microwave on high for 5 to 7 minutes or until bubbly and thick, stirring after 2 minute intervals.

5Beat 1/2 of the hot mixture into the slightly beaten eggs.

6Beat this mixture into the remaining hot mixture. Microwave on high for 1 1/2 to 2 1/2 minutes until thickened and heated throughout, stirring after every 45 seconds of cooking. With whisk, stir in butter and vanilla.

7Pour mixture in equal amounts into 4 dishes.

8Cover and refrigerate.
