Microwaved Mashed Potatoes

  • 3 to 4 medium potatoes, peeled and cubed
  • 1/4 c. water
  • 1/2 stick margarine
  • 1/8 to 1/4 c. milk (use more or less for desired consistency)

Directions

    In microwave bowl with lid (my preference is clear Pyrex), place potatoes with water.

    Cook on full power for 13 minutes, stirring thoroughly once halfway through cooking time.

    Place margarine in bowl; leave covered for 3 to 4 minutes.

    Mash potatoes well.

    Add milk slowly for desired consistency.

    Serve with more margarine, salt and pepper.

    Serves family of 5 well.
