  • 2 c. diced potatoes
  • 1/2 c. sliced carrots
  • 1/2 c. sliced celery
  • 1/4 c. minced onion
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 c. boiling water
  • 1/4 c. flour
  • 2 c. lowfat milk
  • 10 ounce. stick sharp cheddar cheese, shredded
  • 1 pound can cream corn

Directions

    Combine potatoes, carrots, celery, onions, salt, pepper and water.

    Cover and simmer 20 min.

    Make cream sauce with butter, flour and lowfat milk.

    Add in cheese, stir till melted.

    Add in corn, vegetables, heat but don't boil.
