- 3 1/8 cups wheat flour
- 3 1/4 tablespoons sugar
- 1 1/4 tablespoons yeast
- salt
- 5 1/16 tablespoons milk
- 3 eggs
- 13/16 cup butter at room temperature
- 1 egg yolk whisked
Directions

1Preheat the oven to 200 degrees Celsius.

2Mix together the flour, sugar, yeast, salt, milk, and eggs. Knead until the dough is firm and elastic. Add the butter and knead for 10 minutes more by hand (5 if using an electric mixer). Place the dough into a covered bowl and refrigerate overnight.

3Remove the dough from the refrigerator and form into balls of about 60 grams each. Place the balls into a pan, leaving space between them. Cover and set aside for 90 minutes.

4Brush with egg yolk and bake the brioche for 20 minutes.
