  • 600g cubed lamb (leg steaks or backstrap) Safeway 1 lb For $5.99 thru 02/09
  • 1/2 cup KRAFT Italian Dressing
  • 2 tablespoons lemon juice Safeway 4 ct For $5.00 thru 02/09
  • Cucumber Dressing
  • 1/2 cup natural yoghurt
  • 1/3 cup KRAFT Classic Mayonnaise
  • 1 continental cucumber, finely chopped
  • 1 tablespoon freshly chopped mint
  • To Serve
  • 8 pocket or pita breads
  • 100g lettuce mix
  • 2 tomatoes, diced Safeway 1 lb For $1.29 thru 02/09

Directions

    Mix lamb, dressing and lemon juice in a large bowl, cover, refrigerate for half an hour or overnight.

    Thread lamb onto skewers.

    Preheat a BBQ plate or grill on high, cook lamb skewers for 6 - 8 minutes on medium, turning occasionally, or until lamb is cooked to your liking.

    Combine yoghurt, mayonnaise, cucumber and mint.

    Mix to form a dressing.

    Place pocket breads on a baking tray and warm under the grill for 1 minute each side or until warmed through.

    TO SERVE, place 2 pocket breads on a plate, top with a quarter of mixed lettuce, 2 lamb skewers, tomatoes and cucumber dressing.

    Repeat with remaining ingredients.
