- 1/2 medium cucumber, peeled and finely chopped
- 1 1/2 tsp. lemon juice
- coarse ground black pepper to taste (1/8 tsp.)
Directions

1Combine first eight ingredients and mix well.

2Shape into 18 to 20 (1 1/4-inch) meatballs.

3Coat a skillet with nonstick nonfat cooking spray and saute the meatballs 8 to 10 minutes, until no longer pink in the center.
