Mideastern Rice Casserole

  • 1 medium onion, chopped
  • 1/4 c. margarine
  • 1 1/3 c. Minute rice
  • 1 1/3 c. beef or chicken bouillon
  • 1 c. diced cooked ham or chicken
  • 3/4 c. corn or peas, cooked
  • 1/4 c. raisins
  • 1/2 c. toasted slivered almonds

Directions

    Saute onion in margarine until translucent.

    Add rice; saute for 3 minutes.

    Add bouillon, cooked diced ham or chicken, cooked corn or peas and raisins.

    Bring to a boil.

    Remove from heat; cover and let stand for 5 minutes.

    Stir in toasted almonds and serve.
