- 3/4 c. dried beans (kidney, pinto or white)
- 2 garlic cloves, minced
- 2 qt. beef or chicken stock
- 1 c. chopped onion
- 2 carrots, sliced
- 1 medium zucchini, thinly sliced
- 1 tsp. each: basil, oregano, marjoram and sage
- 1 medium potato, cubed
- 1 c. string beans, sliced
- 1 celery stalk, chopped
- 2 c. shredded cabbage
- 2 c. Italian tomatoes, chopped
- 4 oz. whole wheat macaroni or noodles
- 1/2 c. Parmesan cheese
Directions

1Soak beans overnight in enough water to cover; drain.

2Add stock, garlic and onion.

3Simmer 1 1/2 hours.

4Add carrots and zucchini; simmer 30 minutes longer.

5Add tomatoes and macaroni; simmer 10 minutes more.

6Serve in bowls or mugs.

7Sprinkle with 1 teaspoon cheese.
