Ingredients

  • 3 qt. green tomatoes
  • 6 large bell peppers
  • 4 Tbsp. dry mustard
  • 2 Tbsp. turmeric
  • 3 qt. vinegar
  • 4 1/2 c. sugar
  • 2 Tbsp. ginger
  • 1/4 c. cornstarch
  • 1 gal. cabbage
  • 12 large onions
  • 2 1/2 Tbsp. pickling spice
  • 3 Tbsp. mustard seed
  • 1 large box raisins
  • 1 Tbsp. cinnamon
  • 2 qt. water

    Chop all vegetables.

    Mix with 3/4 cup salt.

    Let stand overnight; drain the mixed spices in bag.

    Add sugar, vinegar, spices, mustard seed and water.

    Simmer 20 minutes.

    Add remaining ingredients; bring to a boil, then simmer until just done.

    Remove spice bag.

    Add enough water to cornstarch so it is completely dissolved.

    Add to chow chow and stir well.

    Cut off heat and pack into boiled jars and seal at once.
