- 6 medium baking potatoes
- vegetable oil
- 1/2 c. butter or margarine, softened
- 2 c. (8 oz.) Cheddar cheese, divided
- 1 (8 oz.) carton sour cream
- 1/4 c. milk
- 1 tsp. parsley (fresh)
- 1/2 tsp. salt
- 1/2 tsp. pepper
Directions

1Wash potatoes and rub with oil.

2Bake at 400° for 1 hour or until done.

3Cut potatoes in half lengthwise.

4Carefully scoop out pulp, leaving shells intact.

5Mash pulp.

6Combine mashed pulp, 1 1/2 cups cheese, sour cream, milk, parsley, salt and pepper. Stuff shells with potato mixture and sprinkle with remaining cheese.

7Bake at 350° for 20 minutes.
