  • 5 cups Apples, Any Kind
  • 1-1/2 cup Chopped Walnuts
  • 2-1/2 cups All-purpose Flour
  • 1-1/2 cup Sugar
  • 1 teaspoon Baking Soda
  • 2 teaspoons Baking Powder
  • 1/2 teaspoons Brown Sugar
  • 1/2 Tablespoons Cinnamon
  • 1/2 Tablespoons Finely Grated Lemon Peel
  • 3 whole Eggs
  • 1 Tablespoon Vanilla Extract
  • 1 Tablespoon Water
  • 1 cup Vegetable Oil

Directions

    Clean and cut apples into almond-size pieces and leave in a mixing bowl. Chop walnuts into large chunky pieces and add to apples then set aside.

    Mix all the dry ingredients (flour through lemon peel on the above list) together in a separate mixing bowl and set aside.

    Beat eggs, vanilla and water together, add oil then add to the dry ingredients. Fold in the apples and walnuts and combine everything and mix well.

    Pour into a 9 x 12 baking pan, place in a preheated oven at 350 degrees (F) and bake for 1 hour. Cool and cut into desired pieces.

    If you prefer to make muffins, the recipe yields 24 muffins at 350 degrees (F), baked for 20 to 25 minutes.
