Mince Pound Cake

- 2 1/2 cups flour
- 2 1/2 teaspoons baking powder
- 3/4 cup margarine or 3/4 cup butter
- 1 1/2 cups sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 3/4 cup apple juice
- 1 cup mincemeat
Directions

1Grease and flour a 10 inch fluted tube pan. set aside.

2Stir together flour and baking powder. In large mixer bowl, beat together margarine and sugar until light and fluffy.

3Add eggs and vanilla; beat til light and fluffy.

4Add dry ingredients to the margarine mixture alternately with apple juice.

5beat with mixer on low speed after each addition. By hand, fold in mincemeat.

6Pour into prepared pan. Bake at 350 for 50 to 55 minutes or til done. Let cool in pan 10 minutes.

7Remove from pan Cool on wire rack. .
