- 1 package dry yeast
- 1 tablespoon honey
- 1/4 cup warm water
- 1 teaspoon salt
- 2 tablespoons olive oil
- 3/4 cup cool water
- 3 cups all-purpose flour
Directions

1Dissolve the yeast and honey in the warm water and set aside for 10 minutes.

2In a bowl, combine the salt, olive oil and cool water.

3Place the flour in the bowl of a food processor.

4With the motor running, slowly pour the olive oil mixture through the feed tube.

5Then add the yeast mixture.

6Process until the dough begins to pull away from the sides of the bowl and forms a ball.

7If it is sticky, add a sprinkling of flour.

8Transfer the dough to a lightly floured surface and knead until smooth.

9Place in a buttered bowl.

10Let it rise, covered, for 30 minutes.

11Knead the dough briefly on a floured surface, return it to the bowl, cover with a damp towel and refrigerate.

12One hour before baking, take out the dough and let it sit at room temperature.

13Form and bake as desired.
