Minestrone Recipe

Ingredients

  • 2 (8 ounce.) cans tomato sauce
  • 8 c. cool water
  • 1 pkg. Knorr minestrone mix
  • 1 bunch green onions, thinly sliced
  • 1 teaspoon oregano
  • 1 teaspoon dry basil
  • 10 ounce. pkg. frzn minced spinach, cut into 4 chunks
  • 1/2 c. minced fresh Italian parsley
  • 1/2 c. uncooked small shells

Directions

    Place water in 4 qt Dutch oven, add in soup mix, tomato sauce, green onions, oregano, basil and frzn spinach.

    Bring to a boil and simmer 30 min, stir occasionally.

    Add in parsley and macaroni and simmer 30 additional min or possibly till pasta is tender.

    Make several hrs ahead of time so flavors can blend.

    Reheat and serve with fresh Italian bread.
