Minestrone Soup

Ingredients

  • 1 lb. stew meat and stock
  • 4 carrots
  • 4 stalks celery
  • 1/2 head cabbage
  • 1 (16 oz.) can chopped tomatoes
  • 1 small can tomato paste
  • 1 can garbanzos, undrained
  • 1 can pork and beans
  • 1/2 c. salad macaroni
  • Parmesan cheese
  • parsley
  • oregano
  • 2 Tbsp. salt
  • pepper
  • 1 pkg. frozen spinach
  • 1 onion

Directions

    Cut stew meat up and brown. Cover with stock. Add chopped carrots, celery and onion.

    Cook until almost done and add cabbage.

    Add the undrained tomatoes, tomato paste, garbanzos, pork and beans and macaroni. Add Parmesan cheese, parsley, oregano to taste, salt, pepper and frozen spinach, thawed.

    Makes a lot of soup.
