Minestrone Soup

Ingredients

  • 1 c. dried kidney beans
  • 2 cubes beef bouillon
  • 6 c. water
  • 1 clove garlic
  • 3 chopped carrots
  • 3 stalks celery, chopped
  • 1 small medium onion, chopped
  • 1 c. diced raw potatoes
  • 3 Tbsp. butter
  • 1 c. cooked macaroni
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 1 c. cooked tomatoes

Directions

    Soak beans, bouillon and water overnight. Cook until tender. Saute onion, garlic, salt, carrots, celery and potatoes in butter. Add sauteed vegetables to pan of beans.

    Cook 30 minutes.

    Add macaroni, salt, pepper and tomatoes.

    Simmer 15 minutes.

    Sprinkle with Parmesan cheese.

    Serve with Italian garlic bread.
