Ingredients

  • 2 lb. beef tail bone
  • 3 qt. water
  • 1 bay leaf
  • 1.75 lb. tomatoes, peeled
  • 16 oz. tomato sauce
  • 1 large onion
  • 2 stalks celery, minced
  • 3 cloves garlic, crushed
  • 1 Tbsp. salt
  • 1 tsp. black pepper
  • 2 tsp. basil, crushed
  • 2.5 c. carrots (1/4-inch slices)
  • 2 c. celery (1/4-inch slices)
  • 12 oz. elbow macaroni
  • 1 lb. green beans
  • 8 oz. chick peas
  • 1/2 lb. potatoes, diced
  • 12 oz. kidney beans, cooked

Directions

    You will need to use large pot.

    Simmer bone, bay leaf and celery in water.

    After 20 minutes, add tomatoes, sauce, onion, garlic, salt, pepper and basil.

    Simmer for 1.5 hours.

    Add celery slices, carrots and potatoes; continue to simmer for 30 minutes. Remove bone and add all remaining ingredients.

    Cook for approximately 20 minutes until macaroni is done.

    Serve with a sprinkle grated Parmesan cheese.
