  • 1 pound Italian Sausage
  • 1 Tablespoon Olive Oil
  • 1 cup Diced Onion
  • 1 cup Sliced Carrots
  • 1 clove Garlic, Minced
  • 1 teaspoon Crumbled Basil
  • 2 whole Small Zucchini, Sliced
  • 1 can Italian Pear Tomatoes, Chopped & Undrained (1 Pound)
  • 2 cans Beef Stock (10 3/4 Oz Each)
  • 2 cups Finely Shredded Cabbage (I Use The Already Bagged Stuff For Cole Slaw - Just Cabbage Though!)
  • 1 teaspoon Salt
  • 1/4 teaspoons Pepper
  • 1 can Great Northern Beans (1 Pound), Undrained

Directions

    Brown the Italian sausage in the olive oil in a deep pot or dutch oven over medium heat.

    Next, add the onion, carrots, garlic and basil; allow to cook for 5 minutes.

    Add the zucchini, tomatoes with liquid, beef stock, cabbage, salt and pepper.

    Bring the soup to a boil; reduce heat and allow to simmer covered for 1 hour.

    Finally, add the beans with the liquid and allow to cook for another 20 minutes before serving. You can garnish with fresh parsley to serve if you are so inclined!
