  • 3 lb. beef
  • 4 leaves parsley
  • 1 large onion, chopped
  • 1 can crushed or whole tomatoes
  • 1/4 lb. spaghetti noodles, broken
  • 1 pkg. cut frozen string beans
  • 4 qt. water
  • 4 large carrots, chopped
  • 2 stalks celery, chopped
  • 1 bay leaf
  • 2 c. chopped cabbage
  • 1 can chickpeas
  • 1 pkg. frozen peas
  • salt and pepper to taste

Directions

    In water, put beef, carrots, parsley, celery, onion and bay leaf and simmer, uncovered, for 3 hours. Remove beef and carrots and strain. Combine remaining ingredients. Cook, covered, for 45 minutes. Cut up beef in small pieces. Makes 3 1/2 quarts of soup.
