Ingredients

  • 1 1/2 lb. meaty beef or ham bone
  • 9 c. water
  • 2 carrots, chopped
  • 1 tsp. salt
  • 1 bay leaf
  • 6 slices bacon
  • 1 large onion, chopped
  • salt and pepper to taste
  • 2 stalks celery, chopped
  • 2 cloves garlic, minced
  • 2 medium zucchini, sliced
  • 2 (16 oz.) cans tomatoes, cut up
  • 1 (15 oz.) can garbanzo beans
  • 1 tsp. dried basil
  • 1 tsp. thyme
  • 1 1/2 c. fine noodles or spaghetti

    In a large soup kettle, combine the first five ingredients and simmer 2 hours.

    Remove bone from stock and cut off meat.

    Return meat to the kettle.
