  • 1/2 lb. Italian sausage
  • 2 1/2 to 3 lb. beef shanks
  • 8 c. water
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 bay leaf
  • 1 c. sliced zucchini
  • 1 c. sliced carrots
  • 1 c. chopped celery
  • 4 oz. (1 c.) uncooked shell macaroni
  • 1/2 c. chopped onion
  • 1 tsp. basil leaves, crushed
  • 1 garlic clove, minced
  • 28 oz. can tomatoes, undrained and cut up
  • 16 oz. can kidney beans, undrained
  • 8 oz. can tomato sauce

    If sausage comes in casing, remove casing.

    In 6-quart saucepot, brown sausage and break into small pieces.

    Remove sausage from saucepot; drain on paper towel.
