Mini Bacon Meatballs

  • 2 slices bacon, diced
  • 14 cup onion, diced
  • 1 teaspoon garlic, minced
  • 12 lb ground sirloin (can combine with ground turkey, chicken or pork)
  • 14 cup breadcrumbs, dry (panko nice)
  • 2 tablespoons parsley, minced
  • 12 teaspoon paprika
  • 12 teaspoon kosher salt
  • 12 teaspoon black pepper
  • 1 egg, beaten

Directions

    Preheat oven to 400F.

    Use silpat in a baking pan with a lip or oil a broiler pan.

    Cook bacon in a skillet until just starting to crisp, about 4 minutes.

    Remove and set aside on a paper towel.

    Leave 1 tbs dripping in skillet.

    Saute onion in that skillet over medium heat until softened, about 3 minutes.

    Add garlic and cook another minute.

    Combine ground meat, bacon, onions, bread crumbs, parley, paprika, salt and pepper in a large bowl.

    Stir in beaten egg.

    Form into 1 inch meatballs and place on your prepared pan.

    Bake until fully cooked, about 10 minutes.

    If you want to store them, cool and place on a baking sheet and freeze.

    Then transfer to an airtight container.
