Ingredients
- 1 teaspoon canola oil
- 14 cup onion, diced
- 1 red pepper, diced
- 1 cup broccoli, chopped
- 1 12 teaspoons fresh thyme
- 14 teaspoon salt
- 14 teaspoon pepper
- 34 cup feta cheese, light
- 1 12 cups egg substitute (liquid)
- 1 cup skim milk
- 14 cup wheat bran
- 14 cup whole wheat flour
Directions

1Preheat oven to 400F.

2In non-stick fry pan, heat oil over medium heat.

3Cook onion and red pepper for about 5 minutes or until softened.

4Add broccoli, thyme, salt and pepper; cover and steam for about 3 minutes or until broccoli is tender-crisp and bright green.

5Divide mixture among 12 greased muffin tins.

6Sprinkle cheese over top of vegetable mixture in each cup.

7In bowl, whisk together liquid egg, milk, bran and whole wheat flour.

8Divide evenly over vegetable mixture.

9Bake for about 20 minutes or until golden, set and puffed.

10Let cool slightly before serving.
